I planted very early this year. My basil struggling but everything else looks great.

There are various means of replacing cream in soups, for instance you can puree cooked white beans or potatoes. You could also use evaporated milk (not my favorite) or even add a little corn starch. To zing it up, you could use buttermilk or even add in buttermilk powder.

My first thought was Fairlife's filtered milk. It's actually fat free but people who like coffee have used my milk before and they say it's acceptable. You know how skim milk looks and tastes like dirty dish water? This stuff is creamy white and has a fuller mouth feel.

Now that I think about it, white beans and broccoli sounds pretty good. I could puree a cup of the beans and that thicken it up nicely.

The key is using a good stock and seasoning it well.

I often concoct a stock from crushed tomatoes and chili peppers. I use it for bean soups all the time. You know, that reminds me. Tomato kind of thickens things up too.

Tomorrow, I'm making bison chili. Bison was on sale at Whole Foods.

If you actually want to taste the broccoli, you might want to use a good chicken stock or even a good vegetable stock.

Oh, I would never use that combo of tomato and chilis for this! Ugh that sounds awful. lol
Vegetable stock tastes like a celery stock. But you can buy good meat stock these days. It's not like it used to be. There are quite a few brands out there now.

Speaking of beef- I found a protein powder made from the cow, not the milk. I tastes really good.

Interesting. The good thing about whey though is that it's easily digestible and has a very high bioavailability. Assuming of course you have no issues with lactose.

LOL. It sounded pretty iffy to me. Yes, my preference would be a good chicken stock. Perhaps add some sautéed onions, a carrot, garlic etc.
