That map is great! Speaking of boudin my husband makes a mean whole chicken stuffed with boudin that he puts on the smoker. When its done he'll pull all the chicken off and mix it in with the boudin and we make a kinda version of a pistollete out of it. He will also make a crawfish boulette but will use the finished balls to make an awesome po boy out of, so freaking good.
