I ran across a recipe in a magazine I decided to give a shot. I had to make two minor changes. One, the meat was venison and two, it was to be smoked. So, instead I used a pork loin.
It was a pork loin stuffed with cream cheese, portobello mushrooms, shallots and bacon bits. The pork loin was split up the middle, stuffed with the cream cheese mixture and then wrapped in applewood smoked bacon. I then baked it for one hour at 350 degrees
With that I had Risotto and my world famous green beans sauteed with tomatoes and onions in olive oil and garlic.
Then to top it off I had Angel Food Cake with sliced strawberries and whipped cream (home made)
It was all very tasty.
