    Scientists are trying to figure out how to prevent freezer burn...

    Open the freezer door and there, way in the back, may be an old carton of ice cream growing spikes of ice. Or a forgotten frozen lasagna covered in icy crystals. Or drying of meat surfaces if not well covered.

    People sometimes call this phenomenon “freezer burn,” and it happens when tiny ice crystals on the food’s surface evaporate directly into vapor without first going through the liquid water phase – a process scientifically termed sublimation. This moisture loss can leave the food’s surface layers dried out and discolored.

    There are artificial substances that prevent this kind of ice damage, but few of them are safe to eat. So along with fellow University of Tennessee and Oak Ridge National Laboratory scientists, I’m working for the next three years under a $550,000 grant from the National Science Foundation to identify safe “bio-based” options – materials already found in nature, including substances derived from the natural human digestion process when food is consumed.

    You're onto it . Just get a good quality kitchen vac , and boongo! - no more freezer burn , plus your frozen stuff lasts up to five times longer without any deterioration . The scientists can have a few days off.

    I do too but it didn't last long and doesn't seal properly anymore. I'm not sure if it was just a dud and can't decide whether to replace it ... or not.

    I bought mine more than 10 years ago, I used it for a while, then put it up in a cabinet, where it was forgotten, when we moved to New Mexico again, I started using it again and, I'm still using here, back in Arizona, because we're stocking up the freezer and, with so much stuff, we figured we'd cut down on the freezer burn.

    It's kind of a pain in the butt, until you get used to it and, get a routine going.

    When I buy meat from Costco, because the packages are so large, we separate everything into smaller portions and, the Food Saver comes in real handy for that.

    Yeah..I just didn't want to advertise for them.
    I also use it to make fire starting kits for camp fires. Toss some tinder, kindling, and a few wood strike anywhere matches, and you got instant fire that's waterproof from go.

    I digress a bit but I had a few cold packs that came with Hello Fresh meal ingredients. It said on the outside that they were non toxic and food safe so I cut one open and watered my Rosemary plant with it. You can't kill Rosemary with a stick, and yet! This thick white goo came out and 2 days later my Rosemary was DEAD! Not happy!

    So I don't care what scientists come up with I won't be using it. The grants are a waste of money.

    I don't see how those things can not be toxic, I have several I keep in the freezer for putting into the coolers when I go to New Mexico, they usually stay frozen but, once in awhile they thaw slightly and, they're sticky and, whatever is in them, smells caustic.

    I throw away the ones that thaw.

    I love Rosemary plants, I had some in my yard years ago, I rubbed the leaves between my fingers, just to smell the aroma!
