I'm trying to think of any good reason why people would want to make their own Spam instead of making something a lot tastier with that pork shoulder and ham.

A lot of folks consider Spam to be quite tasty, myself included. But another good reason to make Spam is for emergency situations. I doubt many will be cooking gourmet meals in a SHTF scenario.
