What else can you do but go spend the last day with family. Empty out the freezer and fridge. Bring the grill and the smoker and have a great last day.

If it was my last day on earth I'd eat some cheesecake and go for a nice drive

Okay, but what if you didn't know that it was going to be your last day? That's how I interpreted Montana's OP. Any one of us could experience a brain aneurism or die in a car crash, in which case you're not going to get a chance to do the family time and barbeque thing.
There's only so much we can realistically do to "live each day as if it were your last" - I think that's a saying. I believe you have to accept, number one, that you aren't going to be around forever, and number two, envision on a continuing basis what you can do to make it easier for your family and loved ones to manage things when you're gone.
Even more importantly, from a legacy standpoint, end each day with the knowledge that you're in a good place with the people you care about. Show the ones that you love that you love them, and tell the ones who've wronged you in some way that you forgive them (even if maybe you secretly don't). To the greatest extent possible, leave people with good memories of you, because ultimately that's all that you're really going to leave behind.

For the sake or argument lets say we are not talking about a personal health or fatal accident issue. The asteroid is coming and we can't stop it kind of thing......
How many would panic and make life miserable in those last moments, and how many would cherish those last moments?
Can't know until it happens I guess!

My late father-in-law - a gentle, soft-spoken man who as a twenty-something young man fought as a Marine on Tarawa and Saipan - was stricken with prostate cancer some years ago. He quietly made all the arrangements for his care, etc., sorted out and disposed of his personal belongings, and then decided that he wanted to watch some of the movies that he'd always avoided over the years because of language and content. I think his perspective on things went through some changes toward the end; his ideas about what was important and what was not so important did some shifting. I'm sure he would have enjoyed more time, but he did have eighty years, and he left his family and friends with nothing but good thoughts and memories.
