    Wheat bread

I thought I would share this wheat bread recipe, it's was pretty good. Normally when I try a new recipe or want to cook something new I watch several different videos, and read different recipes then I get an idea of the chemistry and try to wing it with my own flair.

In this recipe I happened to have some barley on hand, I ground it in a food processor and replaced some of the wheat in the recipe with the barley powder.

One bread I seem to have trouble making is white bread. I made one that was pretty good but it took hours and hours.

    Here's how the bread looked : )

I think this is the recipe I settled on. Except in one loaf I added the barley powder and in the other loaf just wheat, for experiment purposes. I also put butter on one when it came out of the oven. I heard if you do that it will soften it that is why one is darker.

    Recipe:
In a measure cup fill it with water 1 1/3 cup at 105 degrees.
lightly sprinkle a packet of dried yeast in it then stir it in.

add 1.5 tbsp of brown sugar to it and stir.

    In a bowl
    3 cups wheat flour
    1tsp salt
    1.5 tbsp brown sugar
    2tbsp oats
    1tbsp sunflower seeds
    1tbsp sesame seeds
    1tbsp flax seeds

Mix with a wooden spoon or spatula
add 3tbsp melted butter stir in
    pour in the yeast mix
    stir with wooden spoon
then use your hands and work it for a few seconds till it is all mixed in
let it sit in the bowl 1 hr
    then oil bread pan
punch down the dough and fold it a little bit,

shape it and put it in the pan
    let rise 20 minutes

    Heat oven to 400
on lower rack put a pan with some water so it steams the oven
bake at 400 for 35 minutes

That looks very good. What's the difference in taste, between the one that's just wheat and, the one that you added the barley?

Thank you. I only had a very small taste. Literally one bite of each just to see. I made it for my loved one, but I liked the one with barley better. There wasn't too much of a difference though it was subtle. The flavor was a bit deeper I thought. But, it was also the one with the butter coating so that may have interfered. : )

The only way I've ever made bread, was in a bread machine, it was white bread and, turned out quite well, put some butter on it, while still warm......nothing quite like it.

That sounds amazing. I'm thinking about getting a bread machine. Are they easy to use? I know that when I was little my grandparents used to have a bread machine, and I remember them talking about the wonderful smell of bread cooking, and how much they loved their bread maker.

Maybe if I use a machine I will have better luck at the white bread.

It's very easy, the recipes that come with it are step-by-step, easy to follow, you can use the pre-boxed bread mixes or, use the recipes, I used the recipes, it felt more like baking from scratch.

I think, with my machine, it took one hour once it started baking, for a small loaf and, 2 hours for the large......I don't remember exactly, I haven't used it in years, I don't really even remember where it is, probably in the storage shed, where a lot of things ended up after the last move.

Thank you for the info it sounds pretty awesome. I know what you mean I still have things packed away in boxes from my last move. Sometimes when you need something it's easier to just buy it new rather than search through boxes.
