    I am careful about perishable items, frozen not so much. But I also know these dates simply mean how long a manufacturing will claim a product is at it's best and safe to eat. It does not mean something goes bad right after.

    Also a good idea to keep opened items at the top of the refrigerator where it is coldest and also use the smell test if ever in doubt.

    You need to take turkey off the carcass for storage and it needs to be well cooked to begin with. If it's changing colors in the center, it was never cooked all the way through.
