    I like it but it is not my favorite.

    I am a fan of my aunts Bread Pudding that she always makes. That is something that is not for everyone either

    Sweet potato casserole.......with a cinnamon/brown sugar topping, with chopped pecans.

    My least favorite, was the raspberry jello salad my in-laws made every year......twice a year.

    See, I don't get that. I hear people say it all the time who've never tried it. I tell people to imagine a delicious apple pie with raisins in it, usually other fruits very finely chopped, brown sugar and cinnamon, and it's like they don't believe me. I think some are probably put off by the fact that in some places it's still called "mincemeat pie", but hardly anyone in this country puts even the smallest amount of meat in their mince pies. Even if they did, for tradition's sake, you wouldn't notice. Mince pie definitely has a PR problem.

    Okay, so for me, I steer clear of raisins because the "iron" taste in them is too strong, and I imagine I'm eating blood clots or scabs. I think some of this may be due to not eating meat, so my palate is more sensitive to iron in foods. I could eat mince without raisins, and it sounds like something I would love.

    However, for about the past 10 years--I've made your leftover turkey enchilada recipe for my daughter. It's gotten to the point where she'll ask if I'll cook enough turkey to make a pan of enchiladas to send home with her. And the funniest part is that she doesn't want to leave on Thanksgiving without me first whipping up a pan of those enchiladas that she can bake at home.
